For my patients who like seafood, shrimp are great. If you are a fan of the taste of curry, this recipe is for you. 🙂
If you want, you can replace the shrimp with pieces of chicken or turkey, or in the Vegetarian version, tofu.
Ingredients for 2 servings:
a teaspoon of red curry paste
2 tablespoons of olive oil or olive oil
200 g of PlantOn or VegeGo 18% coconut cream or regular cream
200 g cherry tomatoes
a pinch of turmeric and curry
rice or pasta
A method of preparing:
If the shrimp are frozen, thaw them in lukewarm water.
Remove the intestine and shell, you can leave the tails.
Add olive oil and curry paste to the pan and fry for a while.
Add dried shrimps, fry for 2 minutes on each side.
Add corn, spices, cream or coconut milk.
Cut the tomatoes in half, place in the pan and simmer for 3 minutes.
Serve the curry with rice or pasta.
